1 lb (450 g) large shrimp, peeled and deveined

1 cup long-grain white rice

2 cups low-sodium chicken broth (or water)

4 cloves garlic, minced

1 medium onion, finely chopped

1 lemon (juice and zest)

1 tablespoon olive oil

2 tablespoons unsalted butter

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

¼ cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Rice: In a medium saucepan, bring 2 cups of chicken broth (or water) to a boil. Add the rice, a pinch of salt, and reduce heat to low. Cover and simmer for about 15-18 minutes, or until the rice is tender and has absorbed all the liquid. Remove from heat and let it sit, covered.

    Prep the Shrimp: While the rice is cooking, pat the shrimp dry with paper towels and season with salt, black pepper, and half of the lemon zest.

      Sauté the Aromatics: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until soft and translucent. Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes until fragrant.

        Cook the Shrimp: Increase the heat to medium-high. Add the shrimp to the skillet and cook for about 2-3 minutes on one side until they turn pink. Flip the shrimp, add the remaining butter, and pour in the lemon juice. Continue to cook for another 1-2 minutes until the shrimp are fully cooked.

          Combine Flavors: Once the shrimp are fully cooked, stir in the cooked rice until well combined. Adjust seasoning with more salt, pepper, and lemon zest to taste.

            Serve: Garnish with freshly chopped parsley and serve with additional lemon wedges alongside.
