1 medium eggplant, diced into 1-inch cubes

1 cup breadcrumbs (panko preferred for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

½ teaspoon smoked paprika

Salt and pepper, to taste

2 large eggs, beaten

Olive oil spray

Prep the Eggplant: Start by salting the diced eggplant. Place it in a colander, sprinkle it with salt, and let it sit for about 30 minutes. This will help draw out excess moisture and bitterness. Afterward, rinse with cold water and pat dry with paper towels.

    Mix the Dry Coating: In a mixing bowl, combine the breadcrumbs, grated Parmesan, garlic powder, oregano, smoked paprika, salt, and pepper. Mix well.

      Prepare the Egg Coating: In another bowl, beat the eggs until well blended.

        Bread the Eggplant: Dip each eggplant cube first into the beaten eggs, allowing excess to drip off, then roll it in the breadcrumb mixture, making sure it’s well coated. Repeat for all the eggplant cubes.

          Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

            Arrange the Eggplant Bites: Lightly spray the air fryer basket with olive oil. Arrange the breaded eggplant bites in a single layer, ensuring they are not crowded (you may need to do this in batches).

              Air Fry: Spray the tops of the eggplant bites lightly with olive oil. Air fry at 375°F (190°C) for 12-15 minutes, flipping halfway through, until they are golden brown and crispy.
