2 ripe bananas, mashed

1 medium apple, peeled and finely chopped

1 cup all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/4 cup honey or maple syrup

1/3 cup unsweetened applesauce

1/4 cup coconut oil, melted (or vegetable oil)

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp salt

Optional: 1/2 cup chopped walnuts or pecans

Instructions
 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.

    Mix the wet ingredients: In a large mixing bowl, combine the mashed bananas, chopped apple, brown sugar, honey (or maple syrup), applesauce, melted coconut oil, eggs, and vanilla extract. Whisk until well combined.

      Combine the dry ingredients: In another bowl, whisk together the flour, rolled oats, baking powder, baking soda, ground cinnamon, and salt.

        Combine wet and dry: Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix! If using, fold in the chopped nuts for an added crunch.

          Fill the muffin tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full.

            Bake the muffins: Place the tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
