Apple Cider Cream Tart

1 ½ cups all-purpose flour

½ cup powdered sugar

½ teaspoon salt

½ cup cold unsalted butter, cubed

1 large egg yolk

2-3 tablespoons cold water

For the Apple Cider Cream Filling:

1 cup fresh apple cider

2 tablespoons cornstarch

½ cup granulated sugar

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

1 cup heavy cream

1 teaspoon vanilla extract

4 large egg yolks

For the Topping:

1 cup whipped cream (store-bought or homemade)

Caramel sauce (for drizzling)

Thin apple slices (for garnish)

Pinch of cinnamon (for sprinkling)

Prepare the Tart Shell: In a mixing bowl, combine the flour, powdered sugar, and salt. Add the cubed butter and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Stir in the egg yolk and add cold water, one tablespoon at a time, until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Preheat Oven: Start by preheating your oven to 350°F (175°C).

      Roll and Bake the Tart Shell: On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess. Prick the bottom with a fork and chill again for about 10 minutes. Bake for 15-20 minutes or until golden brown. Let cool completely.

        Prepare the Filling: In a medium saucepan over medium-high heat, bring the apple cider to a boil. Allow it to reduce until there's about ½ cup left; this should take around 10-15 minutes. Set aside to cool slightly.

          Mix Cornstarch and Sugar: In a bowl, whisk together cornstarch, sugar, cinnamon, and nutmeg. Add the egg yolks and cooled apple cider, mixing until smooth.

            Cook the Filling Mixture: Return the mixture to the saucepan over medium heat. Stir continuously until it thickens and starts to bubble, about 5-7 minutes. Remove from heat and stir in the heavy cream and vanilla extract. Let the filling cool for about 10 minutes before pouring it into the prepared tart shell.

              Chill: Refrigerate the tart for at least 2 hours to set the filling properly.

                Serve: Once chilled, top the tart with whipped cream, drizzling some caramel sauce on top for extra sweetness. Arrange thin apple slices around for garnish and sprinkle with a pinch of cinnamon.
