Ingredients
  

1 cup almond milk (or any milk of choice)

1/2 cup chia seeds

1 teaspoon vanilla extract

2 tablespoons maple syrup (or honey)

1 teaspoon ground cinnamon

1 large apple, finely chopped (preferably a sweet variety like Fuji or Honeycrisp)

1/4 cup raisins (optional)

1/4 cup walnuts or pecans, chopped (optional)

Toppings: extra apple slices, a sprinkle of cinnamon, and nut butter (optional)

Instructions
 

Mix the Base: In a medium-sized mixing bowl, combine the almond milk, chia seeds, vanilla extract, maple syrup, and ground cinnamon. Whisk thoroughly until the mixture is well combined and there are no clumps.

    Set the Chia Seeds: Allow the mixture to sit for about 10 minutes, then whisk again to break up any clumps of chia seeds. Cover the bowl and refrigerate for at least 2 hours or overnight until it thickens to a pudding-like consistency.

      Prepare the Apples: While the chia pudding is chilling, chop the apple into small pieces. You can also sauté the apple pieces in a pan with a dash of cinnamon and a bit of water for 3-5 minutes to soften them slightly if you prefer warm apples.

        Layer the Jars: Once the chia pudding is ready, take out the bowl from the refrigerator and give it a good stir. In your jars (or bowls), start by adding a layer of the chia pudding at the bottom. Top it with a layer of chopped apples, and, if using, a layer of raisins and chopped nuts.

          Repeat the Layers: Continue layering until the jars are filled to your liking - typically, 2-3 layers should be perfect. Finish with a final layer of chia pudding on top and garnish with extra apple slices, a drizzle of nut butter, and an additional sprinkle of cinnamon.
