1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk

1 ½ cups peeled and diced apples (about 2 medium apples, like Granny Smith or Honeycrisp)

For the Streusel Topping:

½ cup all-purpose flour

⅓ cup brown sugar, packed

½ teaspoon ground cinnamon

¼ cup unsalted butter, melted

⅔ cup rolled oats

For Drizzle (Optional):

½ cup powdered sugar

1-2 tablespoons milk or cream

A splash of vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan and set aside.

    Prepare the Streusel Topping: In a medium bowl, mix together ½ cup flour, brown sugar, cinnamon, melted butter, and rolled oats until crumbly. Set aside.

      Mix Dry Ingredients: In a large mixing bowl, whisk together 1 ½ cups flour, baking powder, baking soda, salt, and 1 teaspoon of cinnamon.

        Cream Butter and Sugar: In another bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

          Incorporate Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            Combine Wet and Dry Ingredients: Add the dry ingredients to the butter mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined. Be careful not to overmix.

              Fold in Apples: Gently fold in the diced apples.

                Assemble the Loaf Cake: Pour half of the cake batter into the prepared loaf pan. Sprinkle half of the streusel topping over this layer. Pour the remaining batter on top and finish with the remaining streusel.

                  Bake: Bake in the preheated oven for 55-65 minutes or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, loosely tent with aluminum foil halfway through baking.

                    Cool the Cake: Remove the loaf from the oven and allow it to cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.
