When it comes to filling your bread cups, moderation is key to ensure that each cup bakes evenly without overflowing. Start by spooning in the apple filling gently, filling each cup about three-quarters full. This allows ample room for the apples to expand during baking while ensuring the bread maintains its structure. Overstuffing can lead to soggy bottoms and messy presentations, so it's prudent to err on the side of caution.

Ingredients

4 slices of thick bread (like brioche or challah)

1 medium apple, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/4 cup brown sugar, packed

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

2 tablespoons unsalted butter, melted

1/4 cup chopped walnuts or pecans (optional)

1 tablespoon lemon juice

2 tablespoons maple syrup

A pinch of salt

Non-stick cooking spray or butter for greasing the muffin tin

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick cooking spray or a thin layer of butter.

Prepare the Bread: Using a rolling pin, flatten each slice of bread until it's about 1/4 inch thick. Use a round cookie cutter or the top of a glass to cut each slice into circles large enough to fit into the muffin cups.

Create the Cups: Gently press each bread circle into the muffin tin, molding them into cup shapes. Bake the bread for about 10 minutes or until it’s lightly golden and starts to crisp up. Remove from the oven and set aside.

Prepare the Apple Filling: In a medium bowl, combine the diced apples, brown sugar, ground cinnamon, nutmeg, melted butter, chopped nuts (if using), lemon juice, maple syrup, and a pinch of salt. Toss well until the apples are evenly coated.

Fill the Toast Cups: Spoon the apple mixture into each toasted bread cup, filling them generously.

Bake Again: Return the muffin tin to the oven and bake for an additional 15-20 minutes, or until the apples are tender and the edges of the toast are golden brown.

Cool & Serve: Allow the Apple Cinnamon Toast Cups to cool for a few minutes before removing them from the muffin tin. Serve warm, drizzled with extra maple syrup or a dollop of whipped cream if desired.
