Apple Oat Blender Muffins

2 cups rolled oats

1 medium apple, peeled and chopped (about 1 cup)

2 ripe bananas (medium)

1 cup apple sauce (unsweetened)

1/4 cup honey or maple syrup

1/4 cup almond milk (or any milk of choice)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/2 cup chopped walnuts or pecans, and/or 1/2 cup raisins or chocolate chips

Instructions
 

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it with coconut oil.

    In a high-speed blender, add the rolled oats and blend until you achieve a flour-like consistency. This should take about 30 seconds.

      Add the chopped apple, ripe bananas, apple sauce, honey or maple syrup, almond milk, melted coconut oil, and vanilla extract to the blender. Blend until smooth and creamy.

        In a large mixing bowl, combine the blended mixture with baking powder, baking soda, cinnamon, and salt. Stir until well combined.

          If desired, fold in the chopped walnuts, pecans, raisins, or chocolate chips for added texture and flavor.

            Pour the muffin batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

              Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Once baked, remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  Serve warm or store in an airtight container for up to 5 days, or freeze for longer storage.
