2 ripe avocados

4 whole wheat tortillas

1 cup fresh baby spinach

1 medium tomato, diced

1/2 cup shredded cheese (cheddar or Mexican blend)

1 tablespoon olive oil

Hot sauce (optional)

Prepare the Avocado: Cut the avocados in half, remove the pit, and scoop out the flesh into a mixing bowl. Mash the avocado with a fork until smooth. Add a pinch of salt and pepper to taste. Set aside.

    Cook the Eggs: In a medium-sized skillet, heat the olive oil over medium heat. Crack the eggs directly into the skillet. Season with salt and pepper. Scramble the eggs gently until they are just set but still creamy, about 3-4 minutes. Remove from heat.

      Warm the Tortillas: In another pan or on a skillet, warm the whole wheat tortillas over low heat for about 10-15 seconds on each side, just until pliable. Alternatively, you can microwave them for about 10 seconds.

        Assemble the Wraps: Take a warmed tortilla and spread a layer of the mashed avocado in the center. Add a generous spoonful of the scrambled eggs on top, followed by baby spinach, diced tomatoes, and sprinkle shredded cheese.
