Avocado Pasta with Chicken

12 oz pasta of your choice (fettuccine or penne work great)

2 ripe avocados, halved and pitted

2 cloves garlic, minced

1/4 cup fresh basil leaves, plus extra for garnish

1/4 cup grated Parmesan cheese (plus more for serving)

2 tbsp olive oil

1 tbsp lemon juice

Salt and black pepper, to taste

1 lb chicken breast, diced

1 tsp Italian seasoning

1/2 cup cherry tomatoes, halved (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Chicken: While the pasta cooks, heat 1 tbsp olive oil in a skillet over medium heat. Season the diced chicken breast with Italian seasoning, salt, and pepper. Add the chicken to the skillet and cook for 6-7 minutes or until fully cooked and golden brown. Remove from heat and set aside.

      Make the Avocado Sauce: In a food processor, combine the avocado flesh, minced garlic, basil leaves, Parmesan cheese, lemon juice, and the remaining 1 tbsp of olive oil. Process until smooth and creamy. If the mixture is too thick, add reserved pasta water, one tablespoon at a time, until you reach your desired consistency. Season with salt and black pepper to taste.

        Combine Pasta and Sauce: In a large mixing bowl, combine the drained pasta, cooked chicken, and avocado sauce. Toss gently to coat the pasta evenly.

          Serve: Divide the creamy avocado chicken pasta among plates. Top with halved cherry tomatoes, additional Parmesan cheese, and basil leaves for garnish. Serve immediately and enjoy!
