1 medium onion, diced

2 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 can (15 oz) kidney beans, drained and rinsed

1 can (8 oz) tomato sauce

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded cheddar cheese

1 cup corn (frozen or canned)

Fresh cilantro or parsley, for garnish

Sour cream, for serving (optional)

Sliced jalapeños, for serving (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet over medium heat, add the ground turkey or beef. Cook until browned, breaking it apart with a spatula. Add the diced onion and minced garlic, sauté until the onion becomes translucent.

Add the Chili Base: Stir in the diced tomatoes (with their juices), kidney beans, tomato sauce, chili powder, cumin, smoked paprika, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes to let the flavors meld.

Combine with Pasta: Add the cooked macaroni to the chili mixture, stirring well to combine. Adjust seasoning to taste. If desired, add the corn and stir until heated through.

Serve: Spoon the chili pasta mixture into bowls. Top with shredded cheddar cheese and garnish with fresh cilantro or parsley. Offer sour cream and sliced jalapeños on the side for those who want extra flavor.

Enjoy: Serve warm, perfect for a cozy dinner after a long day of school!
