Baked Apple Cinnamon Oat Bars

2 cups rolled oats

1 cup unsweetened applesauce

1 medium apple, peeled and diced

1/2 cup brown sugar (packed)

1/4 cup honey or maple syrup

1/4 cup milk (dairy or non-dairy)

1/4 cup melted coconut oil or butter

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped nuts or seeds (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line an 8x8 inch baking dish with parchment paper for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, nutmeg (if using), and salt. Stir to combine.

      Blend Wet Ingredients: In another bowl, mix the applesauce, brown sugar, honey or maple syrup, milk, melted coconut oil, and vanilla extract until well blended.

        Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir gently until everything is evenly coated. Fold in the diced apple, nuts/seeds (if using), and raisins or cranberries (if using).

          Transfer to Baking Dish: Spread the mixture evenly into the prepared baking dish. Use a spatula to smooth the top and ensure it's packed down firmly.

            Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted comes out clean.
