1 cup corn kernels (fresh, frozen, or canned)

1 small red onion, finely diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper, to taste

1 cup shredded cheese (cheddar, Mexican blend, or your choice)

8 small corn tortillas

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Salsa and guacamole (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the Filling: In a mixing bowl, combine the black beans, corn, red onion, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper. Mash the black beans slightly with a fork to combine all ingredients well while leaving some texture. Stir in the shredded cheese.
