Ingredients

8 oz wheel of Brie cheese

1 large apple (Granny Smith or Honeycrisp), diced

1/4 cup brown sugar

1 tsp ground cinnamon

1/4 cup chopped walnuts or pecans (optional)

2 tbsp unsalted butter

1 tbsp maple syrup

Fresh thyme leaves for garnish (optional)

1 package of puff pastry (thawed if frozen)

Crackers or sliced baguette for serving

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Apple Filling: In a medium skillet over medium heat, melt the butter. Add the diced apples and sauté for about 4-5 minutes until they begin to soften. Stir in the brown sugar, cinnamon, and nuts (if using) and cook for another 2-3 minutes until the apples are caramelized. Remove from heat and drizzle in maple syrup, stirring to combine. Set aside to cool slightly.

Wrap the Brie: Unroll the puff pastry on a lightly floured surface. Place the Brie wheel in the center of the pastry. Spoon the apple mixture on top of the Brie, ensuring it is evenly spread.

Seal the Pastry: Fold the edges of the puff pastry over the Brie, pinching to seal. You can trim any excess pastry if needed. If you like, you can use the scraps to create decorative shapes on top of the pastry.

Bake: Place the wrapped Brie on a parchment-lined baking sheet. Brush the pastry with an egg wash (1 beaten egg with a splash of water) for a golden finish. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.

Cool & Serve: Remove from the oven and let it cool for about 5 minutes. Garnish with fresh thyme leaves if desired. Serve warm with crackers or sliced baguette for dipping into the gooey cheese and sweet apple mixture.
