Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs (beaten)

1 cup breadcrumbs (preferably Italian-style)

1 cup marinara sauce (homemade or store-bought)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh basil leaves for garnish (optional)

Olive oil spray or 2 tablespoons olive oil

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil or non-stick spray.

Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness (about 1/2 inch thick) using a meat mallet. This ensures even cooking.

Set Up Breading Station: In three shallow dishes, prepare the breading station:

        - In the first dish, place the flour seasoned with salt, black pepper, garlic powder, and onion powder.

          - In the second dish, add the beaten eggs.

            - In the third dish, mix the breadcrumbs with the dried oregano, dried basil, and half of the grated Parmesan cheese.

Bread the Chicken: Dip each chicken breast first into the flour, shaking off the excess, then into the egg, and finally into the breadcrumb mixture, pressing gently to adhere the crumbs to the chicken.

Arrange in Baking Dish: Place the breaded chicken breasts in the greased baking dish in a single layer.

Bake the Chicken: Spray the tops of the chicken breasts lightly with olive oil or drizzle with olive oil. Bake in the preheated oven for about 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the crust is golden brown.

Add Sauce and Cheese: After 25-30 minutes, remove the chicken from the oven. Spoon marinara sauce over each piece, then sprinkle with shredded mozzarella and the remaining Parmesan cheese.

Final Bake: Return the chicken to the oven and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden.

Garnish and Serve: Remove from the oven and let it rest for a few minutes. Garnish with fresh basil leaves, if desired. Serve hot with pasta, a fresh salad, or crusty bread to soak up the sauce!
