2 medium zucchinis, grated and excess moisture squeezed out

1 cup ground turkey (or chicken)

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 large egg

1/2 cup breadcrumbs (can use gluten-free if preferred)

2 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1/2 teaspoon onion powder

1/2 teaspoon dried oregano

Salt and black pepper to taste

1 jar marinara sauce (for serving)

Fresh basil for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible. This will help the meatballs hold their shape.

      Mix Ingredients: In a large mixing bowl, combine the grated zucchini, ground turkey (or chicken), mozzarella cheese, Parmesan cheese, egg, breadcrumbs, minced garlic, parsley, onion powder, oregano, salt, and pepper. Mix well until all ingredients are fully incorporated.

        Shape the Meatballs: Using your hands, take a small amount of the mixture (about 2 tablespoons) and roll it into a ball. Place each meatball on the prepared baking sheet, spaced about an inch apart.

          Bake: Transfer the baking sheet to the preheated oven and bake the meatballs for 20-25 minutes, or until they are golden brown and cooked through. You can flip them halfway through for even browning.
