2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

1 cup fresh basil leaves

1/4 cup grated Parmesan cheese

1/4 cup pine nuts (or walnuts)

2 garlic cloves, minced

1/2 cup extra virgin olive oil

4 slices of crusty bread (like ciabatta or sourdough)

1 large ripe tomato, sliced

Fresh mozzarella cheese, sliced (optional)

Arugula or spinach leaves (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until fully cooked through (an internal temperature of 165°F). Once cooked, remove from heat and let it rest for a few minutes before slicing.

    Make the Basil Pesto: In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, and minced garlic. Processing until finely chopped. With the food processor running, slowly drizzle in the extra virgin olive oil until the mixture is smooth and creamy. Season with salt and pepper to taste.

      Toast the Bread: While the chicken is resting and the pesto is being made, toast the slices of crusty bread in a toaster or on a skillet until golden brown.

        Assemble the Sandwiches: Spread a generous layer of basil pesto on one side of each slice of toasted bread. On two of the slices, layer sliced chicken, tomato, and fresh mozzarella cheese if desired. Add a handful of arugula or spinach leaves for a fresh crunch.

          Top and Serve: Place the remaining slices of bread on top to complete the sandwiches. If desired, press down gently and cut the sandwiches in half. Serve immediately, optionally with a side of fresh salad or potato chips.
