Beef and Broccoli Stir-Fry with Rice

1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain

2 cups broccoli florets

1/2 cup snap peas (optional)

1 cup bell pepper, sliced (any color)

3 cloves garlic, minced

1-inch piece ginger, minced or grated

1/4 cup soy sauce (low sodium preferred)

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 teaspoon sugar

Cooked jasmine or basmati rice, to serve

Sesame seeds and chopped green onions, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine sliced beef, 2 tablespoons of soy sauce, cornstarch, and sugar. Mix until the beef is well coated. Let it marinate for at least 15 minutes while you prepare the other ingredients.

    Prepare the Stir-Fry Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce, sesame oil, ginger, and garlic. Set aside.

      Blanch the Vegetables: Bring a pot of water to boil and blanch the broccoli florets and snap peas for about 2 minutes, then transfer them to an ice bath to stop cooking. Drain and set aside.

        Heat the Pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

          Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Allow to sear for about 2-3 minutes without moving it until browned, then stir-fry for another minute until just cooked through. Remove the beef from the skillet and set it aside.

            Stir-Fry the Vegetables: In the same skillet, add the blanched broccoli, snap peas, and sliced bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

              Combine Everything: Return the beef to the skillet alongside the prepared stir-fry sauce. Toss everything together for another 2-3 minutes to coat the beef and vegetables evenly with the sauce and to heat through.

                Serve: Remove from heat and serve hot over a bed of cooked rice. Garnish with sesame seeds and finely chopped green onions for a burst of flavor and color.
