1 lb ground beef (80/20 for optimal flavor)

1 cup strawberries, hulled and chopped

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 medium carrot, finely grated

3 green onions, sliced (white and green parts separated)

1 tablespoon sesame oil

1 head of butter or romaine lettuce, leaves separated (for wrapping)

Salt and pepper to taste

Fresh cilantro leaves (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Strawberry Glaze:

    - In a small saucepan over medium heat, combine the chopped strawberries, soy sauce, honey, rice vinegar, minced garlic, and grated ginger.

      - Bring to a simmer and let it cook for about 10-15 minutes until the strawberries break down and the mixture thickens slightly.

        - Remove from heat and allow the glaze to cool for a few minutes, then blend until smooth if desired. Set aside.

          Cook the Beef:

            - In a large skillet, heat the sesame oil over medium-high heat.

              - Add the ground beef and season with salt and pepper. Cook until browned, breaking it up with a spoon, approximately 5-7 minutes.

                - Drain any excess fat, if necessary.

                  Add Vegetables:

                    - To the cooked beef, add the grated carrot and the white parts of the green onions. Stir well and cook for an additional 3-4 minutes until the vegetables soften.

                      Combine with Strawberry Glaze:

                        - Pour the prepared strawberry glaze over the beef mixture, stirring to combine well. Allow it to cook together for another 2-3 minutes to meld the flavors.

                          Assemble the Wraps:

                            - Take a lettuce leaf, spoon a generous amount of the beef mixture into the center.

                              - Top with the green parts of the sliced green onions and a few fresh cilantro leaves.

                                - Optionally, sprinkle with sesame seeds for added crunch.

                                  Serve:
