1.5 pounds beef sirloin, cut into 1-inch cubes

2 tablespoons olive oil

2 teaspoons smoked paprika

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon black pepper

1 teaspoon salt

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

For the Lemon Salsa:

1 cup cherry tomatoes, quartered

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

1 small cucumber, diced

Zest and juice of 1 large lemon

1 tablespoon olive oil

Salt and pepper, to taste

Marinate the Beef: In a large bowl, combine olive oil, smoked paprika, minced garlic, ground cumin, black pepper, salt, and rosemary. Add the beef cubes and toss until they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).

    Prepare the Lemon Salsa: In a medium bowl, mix together the cherry tomatoes, red onion, parsley, and cucumber. Drizzle with olive oil, lemon zest, and lemon juice. Season with salt and pepper to taste. Gently mix and set aside to allow flavors to meld.
