Buffalo Cauliflower Rice Bowls

1 medium head of cauliflower, riced (about 4 cups)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup buffalo sauce (plus more for drizzling)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

½ cup crumbled feta or dairy-free alternative (optional)

Lime wedges, for serving

Instructions
 

Rice the Cauliflower: Start by removing the leaves and stem from the cauliflower. Cut it into florets and pulse in a food processor until it resembles rice. Alternatively, you can buy pre-riced cauliflower from the store.

    Sauté the Cauliflower Rice: In a large skillet, heat the olive oil over medium heat. Add the riced cauliflower, garlic powder, onion powder, smoked paprika, salt, and black pepper. Sauté for about 5-7 minutes until the cauliflower is tender but not mushy.

      Add the Buffalo Sauce: Pour in the buffalo sauce and mix thoroughly until the cauliflower is well-coated. Cook for an additional 2-3 minutes, allowing the flavors to meld. Remove from heat.

        Prepare the Bowl Ingredients: While the cauliflower rice is cooking, prepare the other ingredients. In a medium bowl, combine the black beans, corn, cherry tomatoes, avocado, and red onion. Toss gently to mix.

          Assemble the Bowls: In each serving bowl, start with a base of the buffalo cauliflower rice. Top with the black bean mixture, and sprinkle with fresh cilantro and feta if using.
