1 head of cauliflower, cut into florets

1 cup of buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded mozzarella cheese

4-6 large flatbreads or tortillas

1/2 cup Greek yogurt or sour cream

Fresh parsley or cilantro, chopped (for garnish)

Optional: extra buffalo sauce for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, buffalo sauce, garlic powder, onion powder, salt, and pepper until well coated.

      Roast the Cauliflower: Spread the coated cauliflower on a baking sheet in a single layer. Roast for about 20-25 minutes, or until the cauliflower is tender and crispy on the edges, tossing halfway through for even cooking.

        Assemble the Filling: Once the cauliflower is roasted, remove it from the oven and let it cool for a few minutes. Then mix in the shredded mozzarella cheese until evenly distributed.
