2 pounds Yukon Gold potatoes, peeled and quartered

4 cloves garlic, minced

1/2 cup unsalted butter, at room temperature

1/2 cup heavy cream

1/4 cup fresh chives, finely chopped

Optional: a pinch of nutmeg for extra flavor

Boil the Potatoes: Place the peeled and quartered Yukon Gold potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce the heat to medium-low and let simmer for about 15-20 minutes, or until the potatoes are fork-tender.

    Cook the Garlic: In a small saucepan, melt 1/4 cup of the unsalted butter over low heat. Add the minced garlic and cook gently for about 2-3 minutes, or until fragrant but not browned. Remove from heat and set aside.

      Drain and Steam Dry: Once the potatoes are cooked, drain them in a colander and let them sit for a few minutes to allow excess steam to escape.

        Mash the Potatoes: In a large mixing bowl, add the drained potatoes. Use a potato masher or a ricer to mash the potatoes until smooth.
