2 cups cooked quinoa

1 large eggplant, diced

1 bell pepper (any color), diced

1 medium zucchini, diced

1 cup cherry tomatoes, halved

3 cups fresh spinach

2 cups shredded mozzarella cheese

1 cup ricotta cheese

1/2 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced eggplant, bell pepper, and zucchini. Sauté for about 5-7 minutes until they start to soften. Add the garlic, cherry tomatoes, and spinach, cooking until the spinach wilts. Season with oregano, salt, and pepper.

      Mix the Quinoa: In a large mixing bowl, combine the cooked quinoa with the sautéed vegetables. Pour in the balsamic vinegar and mix well.

        Prepare the Cheese Mixture: In a separate bowl, combine the ricotta cheese with a pinch of salt, pepper, and half of the shredded mozzarella. Stir until well blended.

          Assemble the Casserole: In a greased 9x13 inch baking dish, spread half of the quinoa and vegetable mixture. Layer it with the ricotta cheese mixture, then top it with the remaining quinoa mixture. Finally, sprinkle the rest of the mozzarella cheese on top.

            Bake: Cover the casserole with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once baked, let the casserole sit for about 5 minutes. Garnish with fresh basil before serving.
