Cheesy BBQ Chicken Stuffed Peppers

4 large bell peppers (any color)

2 cups cooked chicken, shredded (preferably rotisserie chicken)

1 cup BBQ sauce (your favorite brand)

1 ½ cups shredded cheddar cheese

1 cup cooked rice (white or brown)

½ cup corn (canned or frozen)

½ cup black beans, rinsed and drained

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon cumin

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and gently remove the seeds and membranes. Set aside.

      Make the Filling: In a large mixing bowl, combine the shredded chicken, BBQ sauce, 1 cup of cheddar cheese, cooked rice, corn, black beans, chopped onion, minced garlic, smoked paprika, cumin, salt, and pepper. Mix well until all ingredients are evenly coated.

        Stuff the Peppers: Carefully spoon the BBQ chicken mixture into each prepared bell pepper, packing it lightly but firmly. Place the stuffed peppers upright in a baking dish.

          Top with Cheese: Sprinkle the remaining ½ cup of cheddar cheese evenly over the stuffed tops of the peppers.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and the peppers are tender.
