Cheesy Chicken & Rice Bake

2 cups cooked white rice (or brown rice)

1 lb boneless, skinless chicken breasts, diced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cream of chicken soup (or homemade if preferred)

1 cup chicken broth

1 cup frozen peas and carrots mix

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent. Then add the diced chicken and cook for 5-7 minutes or until the chicken is no longer pink. Season with salt, pepper, paprika, and thyme. Stir in the minced garlic and cook for another minute.

      Mix the Ingredients: In a large mixing bowl, combine the cooked rice, cooked chicken mixture, cream of chicken soup, chicken broth, frozen peas and carrots, and half of the cheddar and mozzarella cheese. Mix well until all ingredients are evenly coated.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish. Spread it out evenly with a spatula.

          Add Cheese Topping: Sprinkle the remaining cheddar and mozzarella cheese on top of the rice and chicken mixture.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

              Cool & Serve: Remove from the oven and let cool for about 5-10 minutes. Garnish with freshly chopped parsley before serving.
