8 small flour tortillas

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded Monterey Jack cheese

1 cup shredded sharp cheddar cheese

1/2 cup diced green chilies (mild or hot, to preference)

1/4 cup finely chopped red onion

1/4 cup chopped fresh cilantro (optional)

1 teaspoon garlic powder

1 teaspoon cumin

1 tablespoon olive oil (for cooking)

Salt and pepper to taste

Sour cream and salsa (for serving)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the corn kernels, Monterey Jack cheese, sharp cheddar cheese, diced green chilies, red onion, cilantro (if using), garlic powder, cumin, salt, and pepper. Mix well until all ingredients are combined evenly.

    Heat the Pan: In a large skillet or griddle, heat 1/2 tablespoon of olive oil over medium heat.

      Assemble the Quesadillas: Take one tortilla and place a generous amount of the filling on one half of the tortilla. Fold the other half over to create a half-moon shape. Repeat the process with the remaining tortillas and filling.

        Cook the Quesadillas: In the heated skillet, add the quesadilla (you can cook 2-3 at a time depending on your pan size). Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip and cook for another 3-4 minutes on the other side. If necessary, add more olive oil to the pan.

          Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Allow to cool slightly before cutting it into wedges. Repeat the cooking process with any remaining quesadillas.

            Serve: Serve the quesadilla wedges warm with sour cream and salsa on the side for dipping.
