2 cups cooked rice (white or brown)

1 lb ground turkey

2 cups fresh broccoli florets (or frozen)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cream of mushroom soup (or homemade)

1/2 cup milk

1/2 tsp garlic powder

1/2 tsp onion powder

1 tsp Italian seasoning

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

Cooking spray or olive oil for greasing the baking dish

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Turkey: In a large skillet over medium heat, add a drizzle of olive oil. Add the ground turkey, breaking it apart with a spatula. Season with garlic powder, onion powder, Italian seasoning, salt, and pepper. Cook until the turkey is browned and cooked through, about 5-7 minutes. Remove from heat.

      Blanch the Broccoli: If using fresh broccoli, bring a small pot of water to a boil. Add the broccoli florets and blanch for about 2-3 minutes until bright green and tender-crisp. Drain and set aside. If using frozen, simply thaw them while preparing the other ingredients.

        Mix the Casserole Base: In a large mixing bowl, combine the cooked rice, cooked turkey, blanched broccoli, cream of mushroom soup, and milk. Mix until fully combined, then fold in 1 cup of shredded cheddar cheese.
