1 pound ground turkey

1 cup fresh spinach, chopped

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/4 cup finely diced onion

2 cloves garlic, minced

1 large egg

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

1 cup marinara sauce (store-bought or homemade)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Mix the Turkey Meatball Ingredients: In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, Parmesan cheese, diced onion, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until well combined, being careful not to overmix.

      Form Meatballs: With your hands, form the mixture into meatballs, about 1.5 inches in diameter. You should get around 16-20 meatballs.

        Brown the Meatballs: In a large oven-safe skillet, heat the olive oil over medium heat. Add the meatballs and sear them for about 4-5 minutes on each side until they are golden brown. You may need to do this in batches to avoid overcrowding the skillet.

          Add the Sauce: Once the meatballs are browned, pour the marinara sauce over them in the skillet, making sure to coat all the meatballs evenly.

            Sprinkle Cheeses: Sprinkle the shredded mozzarella cheese over the top of the meatballs. Transfer the skillet to the preheated oven.

              Bake: Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly and the meatballs are cooked through (internal temperature should reach 165°F / 74°C).

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if using. Serve hot over cooked pasta, rice, or spinach for a low-carb option.
