Chicken Lettuce Wraps with Cherry Glaze

1 pound ground chicken

1 tablespoon olive oil

1 clove garlic, minced

1 inch fresh ginger, grated

1/4 cup red bell pepper, finely chopped

1/4 cup green onions, chopped

1/4 cup carrots, shredded

1/4 cup water chestnuts, diced

2 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons cherry preserves

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)

Salt and pepper to taste

1 head of butter or iceberg lettuce, leaves separated

Sesame seeds and additional green onions for garnish (optional)

Instructions
 

Cook the Chicken: In a large pan over medium heat, add olive oil and allow it to warm. Add the ground chicken and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes.

    Flavor the Mixture: Add the minced garlic and grated ginger to the chicken. Sauté for about 1 minute until fragrant. Stir in the red bell pepper, green onions, carrots, and water chestnuts. Cook for an additional 3-4 minutes until the vegetables are slightly softened.

      Prepare the Glaze: In a small bowl, whisk together the soy sauce, cherry preserves, rice vinegar, sesame oil, and a pinch of salt and pepper. Pour this mixture over the chicken and vegetable mixture in the pan. Stir to combine and allow it to come to a simmer.

        Thicken the Sauce: Add the cornstarch mixture to the pan, stirring constantly until the sauce thickens, about 2-3 minutes. Taste and adjust seasoning if needed.

          Assemble the Wraps: Remove the pan from heat. To assemble, spoon a portion of the chicken mixture into a lettuce leaf, making sure it’s loaded with the delicious cherry glaze.
