1 lb boneless, skinless chicken thighs

2 tbsp olive oil

1 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

1 tsp garlic powder

½ tsp onion powder

½ tsp salt

¼ tsp black pepper

Juice of 1 lime

For the Lime Slaw:

2 cups green cabbage, finely shredded

1 cup carrots, grated

½ cup fresh cilantro, chopped

1 jalapeño, finely diced (optional for heat)

3 tbsp mayonnaise

1 tbsp Greek yogurt (or sour cream)

Juice of 2 limes

Salt and pepper to taste

For Assembly:

8 small corn tortillas

Avocado slices, for garnish

Lime wedges, for serving

Extra cilantro, for garnish

Marinate the Chicken: In a bowl, whisk together olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and lime juice. Add the chicken thighs, ensuring they are well-coated. Cover and marinate for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Lime Slaw: In a large bowl, combine shredded cabbage, grated carrots, chopped cilantro, and jalapeño (if using). In a separate small bowl, mix mayonnaise, Greek yogurt, lime juice, salt, and pepper to create the dressing. Pour this over the cabbage mixture and toss until well combined. Adjust lime juice and seasoning to taste. Refrigerate while you cook the chicken.
