Chili Mac Bites for Lunchboxes

1 cup elbow macaroni

1 cup ground beef (or turkey for a lighter option)

1 can (15 oz) chili beans (drained and rinsed)

1 cup diced tomatoes (canned or fresh)

1 tablespoon chili powder

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

1 cup shredded cheddar cheese

1/2 cup breadcrumbs

1/4 cup chopped green onions (optional)

1/4 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for greasing the pan

Cook the Pasta: In a medium pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain any excess fat.

      Add Chili Components: Stir in the chili beans, diced tomatoes, chili powder, garlic powder, onion powder, cumin, salt, and black pepper into the skillet with the meat. Allow the mixture to simmer for about 5 minutes, letting the flavors meld.

        Combine Ingredients: Turn off the heat and stir in the cooked macaroni and 3/4 cup of shredded cheddar cheese until everything is well combined.

          Prepare the Muffin Tin: Preheat your oven to 375°F (190°C). Grease a mini muffin tin with cooking spray or olive oil.
