Ingredients

4 large cucumbers, peeled and roughly chopped

1 cup Greek yogurt (or dairy-free yogurt for a vegan option)

1/2 cup fresh mint leaves, packed

1 cup vegetable broth (chilled)

3 tablespoons lemon juice (freshly squeezed)

2 tablespoons olive oil

1 garlic clove, minced

Salt, to taste

Black pepper, to taste

Optional garnish: additional mint leaves, cucumber slices, or a drizzle of olive oil

Instructions

Prepare the Cucumbers: Start by peeling and roughly chopping the cucumbers. If they have lots of seeds, consider scooping them out for a smoother texture.

Blend the Ingredients: In a blender, combine the chopped cucumbers, Greek yogurt, fresh mint leaves, chilled vegetable broth, lemon juice, olive oil, minced garlic, and a pinch of salt and pepper. Blend until smooth and creamy.

Taste and Adjust: Taste the soup and adjust the seasoning with more salt, pepper, or lemon juice according to your preference.

Chill the Soup: Transfer the blended soup into a large bowl or container, cover, and refrigerate for at least 1 hour, or until thoroughly chilled.

Serve: Once chilled, ladle the soup into bowls. Garnish with fresh mint leaves, cucumber slices, and a drizzle of olive oil if desired.

Enjoy: Serve as a refreshing appetizer or a light meal on a warm day. Enjoy the vibrant, cooling flavors!
