1 ½ cups all-purpose flour

½ teaspoon salt

2 tablespoons granulated sugar

½ cup unsalted butter, chilled and cubed

5 to 6 tablespoons ice water

3 medium ripe peaches, pitted and sliced (preferably yellow peaches)

2 tablespoons brown sugar

1 teaspoon vanilla extract

Zest of 1 lemon

1 teaspoon cornstarch

¼ teaspoon ground cinnamon

1 egg, beaten (for egg wash)

Fresh mint leaves (for garnish)

Prepare the Dough: In a large mixing bowl, combine the flour, salt, and granulated sugar. Add the chilled butter cubes and use a pastry cutter or your fingers to blend the mixture until it resembles coarse crumbs.

    Form the Dough: Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough begins to hold together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

      Prepare the Filling: In a medium bowl, combine the peach slices, brown sugar, vanilla extract, lemon zest, cornstarch, and cinnamon. Gently toss until the peaches are evenly coated. Set aside for 10-15 minutes to allow the juices to combine.

        Roll Out the Dough: On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to a parchment-lined baking sheet.

          Assemble the Galette: Arrange the peach filling in the center of the dough, leaving about a 2-inch border. Fold the edges of the dough over the peaches, pleating as necessary to create a rustic look.

            Egg Wash: Brush the folded dough with the beaten egg to give it a golden finish during baking.

              Chill the Galette: Place the assembled galette in the refrigerator for 20 minutes. This step helps maintain the shape during baking.
