Prep the Dates: Begin by placing the pitted Medjool dates in a food processor. Process them until they form a sticky paste. If the mixture is too dry, you can add a little water to help it come together.

    Make the Caramel Filling: In the same food processor, add the almond butter, maple syrup, sea salt, and vanilla extract to the date paste. Blend until smooth and well combined. The mixture should be thick but pliable.

      Shape the Bites: Scoop out about one tablespoon of the caramel mixture and roll it into a ball. Repeat until all the mixture is used. Place the caramel balls on a parchment-lined baking sheet and chill in the refrigerator for about 15-20 minutes to firm up.
