Classic Beef & Bean Burritos

1 lb ground beef

1 can (15 oz) black beans, rinsed and drained

1 medium onion, chopped

3 cloves garlic, minced

1 taco seasoning package (or homemade: 1 tbsp chili powder, 1 tsp ground cumin, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt and pepper to taste)

1 cup diced tomatoes (canned or fresh)

1/2 cup corn (optional)

4 large flour tortillas

1 cup shredded cheddar cheese

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

    Sauté Vegetables: Add the chopped onion and minced garlic to the skillet with the beef. Cook for another 2-3 minutes until the onion is softened and translucent.

      Season: Stir in the taco seasoning and diced tomatoes (including juices). If using, add the corn. Mix well to combine, then let simmer for about 5 minutes, allowing the flavors to meld together.

        Add Beans: Fold in the black beans and cook until heated through, about 3-4 minutes. Taste and adjust seasoning as needed. Remove from heat.

          Assemble the Burritos: Lay out each tortilla flat on a clean surface. Spoon a generous amount of the beef and bean mixture into the center of each tortilla. Top with a sprinkle of shredded cheddar cheese.

            Wrap the Burritos: Fold in the sides of the tortilla and roll up tightly from the bottom to the top, securing the filling inside.

              Heat the Burritos (optional): For a crispy exterior, place the burritos seam-side down in a heated skillet over medium heat. Cook for about 2-3 minutes on each side until golden brown.

                Serve: Slice the burritos in half, if desired, and serve with sour cream, chopped cilantro, and lime wedges on the side.
