1 ½ cups all-purpose flour

¼ teaspoon salt

1 tablespoon granulated sugar

½ cup unsalted butter, chilled and diced

6 to 8 tablespoons ice water

For the filling:

2 cups fresh blueberries (or frozen, thawed)

¼ cup granulated sugar (adjust based on sweetness preference)

2 tablespoons cornstarch

1 teaspoon vanilla extract

1 teaspoon lemon juice

¼ teaspoon cinnamon (optional)

1 egg (for egg wash)

1 tablespoon coarse sugar (for garnish)

Make the crust: In a large bowl, whisk together the flour, salt, and sugar. Add the diced butter and, using your fingertips or a pastry cutter, mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Prepare the filling: In a medium bowl, combine the blueberries, granulated sugar, cornstarch, vanilla extract, lemon juice, and cinnamon (if using). Gently mix until combined, and let the filling sit for about 15 minutes to allow the blueberries to release their juices.

      Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

        Roll out the dough: On a lightly floured surface, roll out the chilled dough into a 12-inch circle, about 1/8 inch thick. Transfer it to the prepared baking sheet.
