Classic Chicken Fried Rice

2 cups cooked rice (preferably day-old for best texture)

1 cup cooked chicken, diced (rotisserie chicken works well)

2 tablespoons vegetable oil

2 large eggs, beaten

1 cup mixed vegetables (peas, carrots, and corn)

3 green onions, chopped

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional for extra flavor)

1 teaspoon sesame oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Rice: If you are using freshly cooked rice, spread it out on a baking sheet and let it cool for about 30 minutes to reduce moisture.

    Scramble Eggs: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the beaten eggs and scramble until fully cooked. Transfer the eggs to a plate and set aside.

      Cook Chicken and Veggies: In the same skillet, add the remaining tablespoon of oil. Once hot, add the diced chicken and stir-fry for about 2 minutes until heated through. Add the mixed vegetables and stir-fry for another 2 minutes until vegetables are tender.

        Combine Ingredients: Push the chicken and vegetables to the side of the skillet. Add the cooked rice to the empty side of the skillet, breaking up any clumps. Pour the soy sauce, oyster sauce (if using), and sesame oil over the rice. Mix everything together, stirring continuously for about 3-4 minutes.

          Finish with Eggs and Green Onions: Add the scrambled eggs back into the skillet and stir in the chopped green onions. Season with salt and pepper to taste. Stir-fry everything together for an additional minute to blend the flavors.

            Serve: Remove from heat and transfer the fried rice to serving plates. Garnish with fresh cilantro if desired.
