Classic Spaghetti Carbonara

Ingredients
  

400g spaghetti

150g pancetta or guanciale, diced

3 large eggs

100g Pecorino Romano cheese, finely grated

50g Parmigiano-Reggiano cheese, finely grated

2 cloves garlic, crushed

Salt, to taste

Freshly cracked black pepper, to taste

Fresh parsley, finely chopped (optional, for garnish)

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil.

      - Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.

        Prepare the Sauce:

          - In a mixing bowl, whisk together the eggs, Pecorino Romano, and Parmigiano-Reggiano until well combined. Set aside.

            Cook the Pancetta/Guanciale:

              - In a large, deep skillet, add the diced pancetta or guanciale over medium heat.

                - Cook until crispy, about 5-7 minutes.

                  - Add the crushed garlic for the last minute, then remove the garlic and discard it, leaving the flavorful oil.

                    Combine:

                      - Once the pasta is cooked and drained, quickly add it to the skillet with the pancetta on low heat.

                        - Remove the skillet from heat and add the egg and cheese mixture immediately, stirring vigorously to create a creamy sauce. Add reserved pasta water gradually until you reach your desired consistency.

                          Season:

                            - Season with salt and lots of freshly cracked black pepper. Toss well to combine.

                              Serve:

                                - Plate your Carbonara and garnish with additional grated cheese, freshly cracked pepper, and chopped parsley if desired.
