For the Pie Crust:

1 ½ cups all-purpose flour

1/2 teaspoon salt

1 tablespoon granulated sugar

1/2 cup unsalted butter, chilled and diced

4-5 tablespoons ice water

For the Filling:

2 cups sweet potatoes, peeled and cubed

1 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup milk (or evaporated milk for extra creaminess)

1/4 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

For Serving (optional):

Whipped cream or vanilla ice cream

Instructions
 

Prepare the Pie Crust:

    - In a large mixing bowl, combine flour, salt, and sugar.

      - Add the chilled and diced butter. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

        - Stir in ice water, one tablespoon at a time, until the mixture comes together into a dough.

          - Form the dough into a ball, flatten it into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

            Cook the Sweet Potatoes:

              - In a large pot, bring water to a boil. Add the cubed sweet potatoes and cook for about 15-20 minutes or until fork-tender.

                - Drain and let them cool slightly. Then, mash the sweet potatoes until smooth. Measure out 2 cups.

                  Preheat the Oven:

                    - Preheat your oven to 350°F (175°C).

                      Make the Filling:

                        - In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, cinnamon, nutmeg, and salt.

                          - Stir in the milk, melted butter, eggs, and vanilla extract until well combined and smooth.

                            Assemble the Pie:

                              - On a floured surface, roll out the chilled pie dough to fit a 9-inch pie pan. Transfer the dough to the pan and trim any excess.

                                - Pour the sweet potato filling into the prepared crust, smoothing the top with a spatula.

                                  Bake:

                                    - Bake in the preheated oven for 55-60 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.

                                      - If the crust edges brown too quickly, cover them with aluminum foil.

                                        Cool and Serve:

                                          - Remove the pie from the oven and let it cool on a wire rack for at least 1 hour. This helps the filling to set properly.
