1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/2 cup almond butter (or nut butter of choice)

1/2 cup honey or maple syrup

1/2 cup crushed pineapple, drained

1/4 cup chia seeds

1 tsp vanilla extract

1/4 tsp salt

Optional toppings: additional shredded coconut or chopped nuts

Instructions
 

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang to make it easier to remove later. Set aside.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, chia seeds, and salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), smashed pineapple, and vanilla extract until smooth and fully combined.

        Combine Mixtures: Pour the wet ingredients into the dry mixture and stir until everything is evenly combined. The mixture should be sticky but hold together when pressed.

          Transfer to Pan: Transfer the mixture to the prepared baking dish. Using a spatula or your hands, press the mixture firmly and evenly into the dish. Make sure it's packed tightly for perfect squares.

            Chill: Place in the fridge for at least 2 hours (or in the freezer for 30 minutes) to set.
