2 cups whole wheat rotini pasta

1 cup cooked, shredded chicken breast (grilled or rotisserie)

1 cup cherry tomatoes, halved

1 cup cucumbers, diced

1 bell pepper (red or yellow), diced

½ cup baby spinach, roughly chopped

½ cup sweet corn (canned or frozen, thawed)

¼ cup red onion, finely diced

½ cup feta cheese, crumbled (optional)

⅓ cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil or parsley, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole wheat rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, dried oregano, salt, and pepper until emulsified.

      Combine Ingredients: In a large mixing bowl, combine the cooked rotini pasta, shredded chicken, cherry tomatoes, cucumbers, bell pepper, baby spinach, sweet corn, and red onion. Toss gently to mix all the ingredients evenly.

        Dress the Salad: Pour the dressing over the pasta and veggie mixture. Toss gently to coat everything evenly with the dressing.

          Add Cheese: If desired, sprinkle the crumbled feta cheese over the top and give it a final gentle toss.

            Chill & Serve: To enhance the flavors, cover the bowl and refrigerate for at least 30 minutes before serving. Serve chilled, garnished with fresh basil or parsley if desired.
