2 medium zucchinis, spiralized into noodles

2 cups cooked chicken breast, shredded or diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ cup red bell pepper, diced

¼ cup red onion, thinly sliced

1 avocado, diced

¼ cup fresh basil, chopped

¼ cup olive oil

2 tablespoons balsamic vinegar

2 tablespoons Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

Optional: ¼ cup feta cheese, crumbled

Prepare the Zucchini Noodles: Using a spiralizer, spiralize the zucchinis into noodles. Place the noodles in a colander, sprinkle with a little salt, and let them sit for about 10 minutes to release excess moisture. After 10 minutes, pat dry with paper towels.

    Mix the Vegetables: In a large mixing bowl, combine the spiralized zucchini noodles, cooked chicken, cherry tomatoes, cucumber, red bell pepper, red onion, and fresh basil. Toss gently to combine.

      Make the Dressing: In a small bowl or a jar with a lid, whisk together the olive oil, balsamic vinegar, Dijon mustard, garlic powder, salt, and pepper until well mixed. If using a jar, you can shake it vigorously until combined.

        Combine Salad and Dressing: Pour the dressing over the salad mixture and toss well to ensure everything is evenly coated.

          Add Avocado and Feta: Gently fold in the diced avocado and feta cheese (if using) to the salad, being careful not to mash the avocado.

            Chill: Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together, but it can be made up to a few hours in advance.

              Serve: Once chilled, give the salad a final gentle toss, adjust seasoning if needed, and serve cold.
