Ingredients
  

1 can (15 oz) chickpeas, rinsed and drained

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped (optional)

Juice of 1 lemon

3 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

4 large whole wheat or spinach wraps

1 cup baby spinach or mixed greens for serving

Instructions
 

Prepare the Chickpea Mixture: In a large mixing bowl, combine the rinsed and drained chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, sliced Kalamata olives, crumbled feta cheese, parsley, and mint.

    Make the Dressing: In a separate small bowl, whisk together the lemon juice, olive oil, oregano, salt, and pepper. Adjust the seasoning to taste.

      Combine: Pour the dressing over the chickpea mixture and gently toss everything together until well coated.

        Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and develop.
