2 cups fresh corn kernels (about 4 ears of corn)

2 cups cherry tomatoes, halved (any variety you like!)

1 cup fresh mozzarella balls (bocconcini or ciliegine)

1 cup fresh basil leaves, torn

1/4 red onion, thinly sliced

3 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

1 teaspoon honey

Salt and freshly ground black pepper to taste

Optional: 1 avocado, diced, for a creamy addition

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and cook for 3-5 minutes until tender. Remove and sink the corn in an ice bath to stop cooking. Once cooled, cut the kernels off the cob and set aside. (Alternatively, you can use canned or frozen corn that has been thawed and drained.)

    Mix the Vegetables: In a large mixing bowl, combine the cooked corn kernels, halved cherry tomatoes, mozzarella balls, torn basil leaves, and red onion slices. If you opted for avocado, gently fold it in to avoid mashing.

      Make the Dressing: In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

        Combine and Serve: Drizzle the dressing over the salad mixture and toss gently to ensure everything is well-coated. Taste and adjust the seasoning with more salt and pepper if desired.
