Ingredients
  

2 cups fresh corn kernels (about 3-4 ears of corn)

2 medium ripe tomatoes, diced

1 small red onion, finely chopped

1 jalapeño pepper, seeds removed and minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon olive oil

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional for extra flavor)

Instructions
 

Cook the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and boil for about 3-5 minutes until tender. Remove from heat, drain, and allow to cool. Once cooled, cut the kernels off the cob.

    Prepare the Vegetables: In a large mixing bowl, combine the diced tomatoes, finely chopped red onion, and minced jalapeño pepper.

      Mix in the Corn: Add the cooled corn kernels to the bowl with the other vegetables. Gently toss to combine.
