Cranberry Apple Brie Crostini

1 baguette, sliced into 1/2 inch rounds

1 cup fresh cranberries, rinsed and drained

1 large apple (such as Granny Smith or Honeycrisp), cored and diced

1 cup brie cheese, cut into small pieces

1/2 cup pecans, chopped

1/4 cup honey

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baguette Slices: Arrange the baguette slices on a baking sheet. Brush one side of each slice lightly with olive oil. Toast in the oven for about 5-7 minutes, or until golden brown. Remove from the oven and set aside.

      Make the Cranberry Apple Topping: In a medium saucepan, combine the fresh cranberries, diced apple, chopped pecans, honey, rosemary, salt, and pepper. Cook over medium heat for about 5-8 minutes or until the cranberries start to burst and the apples soften. Stir occasionally to prevent sticking. Remove from heat and set aside to cool slightly.

        Assemble the Crostini: On each toasted baguette slice, place a small piece of brie cheese first, followed by a generous spoonful of the cranberry apple mixture on top of the brie.

          Final Toast: Arrange the assembled crostini back on the baking sheet and return to the oven for an additional 3-5 minutes, just until the brie begins to melt.
