1/2 teaspoon baking powder

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/3 cup vegetable oil or melted coconut oil

1 large egg

1/2 cup buttermilk (or milk + 1/2 tablespoon vinegar to create a buttermilk substitute)

Zest of 1 large orange

1 cup fresh or frozen cranberries, roughly chopped

1/2 cup chopped walnuts or pecans (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease or line a muffin tin with paper liners to prepare for your batter.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, flour, baking powder, baking soda, salt, cinnamon, brown sugar, and granulated sugar. Stir until well combined.
