4 strips of bacon, chopped

150g smoked sausage, sliced

100g salami, diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 large carrot, diced

2 celery stalks, diced

4 cups chicken or vegetable broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon dried thyme

½ teaspoon smoked paprika

2 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Bacon: In a large pot, heat olive oil over medium heat. Add the chopped bacon and cook until crispy. Remove with a slotted spoon and set aside on a paper towel-lined plate, leaving the rendered fat in the pot.
