8 oz. penne pasta

1 lb. boneless, skinless chicken breast, cut into bite-sized pieces

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

3 cups fresh spinach

1 cup heavy cream

1 cup chicken broth

1 tsp Italian seasoning

½ tsp red pepper flakes (optional)

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Be careful not to burn the garlic.

        Add Vegetables: Stir in the cherry tomatoes and cook for 2-3 minutes until they start to soften. Then add the fresh spinach and cook until wilted.

          Make the Creamy Sauce: Pour in the chicken broth and heavy cream, and stir to combine. Add Italian seasoning and red pepper flakes (if using). Let it simmer for 3-4 minutes until slightly thickened.

            Combine Pasta and Chicken: Return the cooked chicken to the skillet and mix in the penne pasta. Stir until everything is well coated in the creamy sauce.
